I am frequently asked, “How do I start a butcher shop like Farmstead Meatsmith?” At a loss for what to say, I usually recommend spending time in Europe apprenticing at a traditional shop. But if I am honest with myself, I should confess that not only have I never done this, but also that if given the chance, I probably wouldn’t. It started when Lauren and I met in San Diego where we were finishing our master’’s degrees. We were seeking truth in academics so that someday we could become professors and share it with others in the fields of theology and literature. As our commitment to one another grew, our love of academia waned. Our reason for studying became obscure. What was the purpose? If it was to find truth, Lauren’s love for me was teaching me that truth is not just something you know, but something you do. Accordingly, I asked her to marry me.
