You might recognize Chef Bri Van Scotter from various Athlon Outdoors titles like “Ballistic Magazine.” She’s the founder of Wilderness to Table—a lifestyle project devoted to showcasing the beauty of wild game meat through food recipes—and now she’s bringing her culinary skills to video in a new series of the same name from Panteao Productions. In the first episode, Chef Bri shows you how to cook quail along with preparing a salad and desert. With each new episode of “Wilderness to Table,” additional videos will be available in separate categories, including meat preparation, chef skills, pantry staples, and recipe categories like starters, entrées, desserts and cocktails.
A pro chef and pastry chef with a passion for hunting, Bri Van Scotter graduated from the Culinary Institute of America in Napa, Calif. with an associates degree in culinary arts. She then went on to graduate get a degree in baking and pastry from The Art Institute, where she eventually became a chef instructor. Now, in addition to her work with Panteao, she’s also the Wild Game Cooking Editor for “Ballistic Magazine.”
